Vanessa and Dan's Recipes
Thaks Dan and Vanessa for sharing your recipes!!! I have some requests from various people for some of the other recipes for dishes that were served that night, so keep sending me your recipes and I will keep posting them as I get them YAAAY!
hehe ok so Dan sent me his recipe super fast, and it is quite hilarious... here is his e-mail:
Tesco Easy Meals: British Shepherds Pie
Located on the last isle in the fridge section of Tesco at Milton
2 for 3 quid on special occasions
and here is Vanessa's way more serious and complex recipe for stuffed peppers:
Stuffed Peppers: Makes about 12 peppers 1 cup rice 1 cup water 12 bell
peppers 2 chilli peppers (or other hot ones like jalapaneo or habenero) 1
can red kidney beans, drained ~200g mushrooms 6 medium tomatoes 1 small
onion 1 block (300-400g) of cheese depending on taste, sharper is better,
plus 1 slice for the top of each pepper.
Preheat oven to 200C Bring the water to a boil. Add the rice and lower to a
simmer, stir occassionally. While that's simmering cut the tops off the bell
peppers, clean out the seeds, and dice the part of the pepper that got cut
off by the stem. Chop up everything else except the cheese slices (remember
to keep an eye on the rice). When the rice has absorbed all the water,
remove from heat and add all the stuff you diced up. Mix well. Spoon the mix
into the bottoms of the peppers and place on an ungreased pan (something
with high sides works better than a cookie sheet because as the peppers
soften they can tip over) and top each pepper with a slice of cheese. Bake
until peppers start to wrinkle at edges and cheese is slightly browned
(about 45 min).
